Trang Roast Pork Festival, Thailand – Early September




Sept-Trang-bbq-pork-festival03Every September, a Roast Pork Festival is organised in Trang Province, mainly to promote tourism.  The “Trang Roast Pork Festival” (งานเทศกาลหมูย่างจังหวัดตรัง) is an annual tourism promotion activity organised by the provincial chamber of commerce.

The festival’s central feature is Trang Roast Pork from the century-old, special Chinese-originated recipe. The pork skin is crispy, the meat is tender and delicious due to a process by which the pig is marinated in honey and spices for 5 hours before being roasted in the oven of a large barbecue that was preheated for two hours.

The inland city of Trang does not offer many sights in and of itself, which will keep your attention on the food.  However, its compact centre contains bustling day and night markets, charming raan ko-pii (coffee shops) that serve extra strong coffee, and well-established restaurants featuring the delicious moo yang (Chinese-style roast pork). 

Moo Yang is  also sold daily throughout the year, and eaten with morning coffee or served as a banquet dish with rice at weddings, New Year and mid year celebrations, and other feasts such as funerals.  Trang Roast Pork is also used in Chinese-originated ceremonies, and traditions giving offerings to ancestral spirits and gods.

The roast pork and several other dishes give Trang’s cuisine a distinct Chinese tendency.  Crispy, roasted, honey-dipped pork ( mu yang ), Chinese doughnuts ( paa tong ko ), and dim sum all make delicious breakfasts, as well as being the staple recipes of the province.  These foods are widely enjoyed throughout the day and evening, and have become a unique characteristic of the place.   This menu is influenced by the more than 80% of the local people who are of Chinese descent.

Characteristics of Trang Roast Pork include a crispy skin golden yellow in colour, tender aromatic meat with a delicious and harmonious blend of herbs and spices  in the taste. When made from Moo Kee Pra, a special breed of pig, an added characteristic is a very low fat content in the meat.  The pork meat is marinated in  “Ou Chieng Fun” seasoning and other ingredients including salt, sugar, soy sauce, garlic, and pepper for around 6 – 8 hours, in a room protected from insects by mosquito nets.

History

About 100 years ago, Trang was a seaport trading with foreign countries through the Kantang Port.  Chinese immigrant labourers from Canton arrived at Kantang District and disembarked via the Trang town river mouth.  These immigrants raised a breed of pig, which they brought with them on their journey, and the pigs were able to thrive very well in the new environment.

After a while, the first roast pork was sold by the ancestors of the Fongchan family.  Fong Saingam, a Cantonese immigrant, began making roast pork over 80 years ago, and was the first to begin selling roast pork during the period. The dish became known as Fongchan roast pork.

According to records, the ancestors of the Fongchan family employed Cantonese people who were skilled in the style of roasting pork for this recipe. Later, selling roast pork was taken up more popularly as a general skill and trade by the people of Trang.  Many staff at the Fongchan roast pork business began businesses of their own, until there were dozens of them in the town.  The trade was handed down to later generations becoming known as Trang Roast Pork.

Various activities support the Trang Roast Pork Festival, including special sales of barbecued pork at below market prices, a fancy dress parade, a food preparation contest that uses barbecued pork, various forms of entertainment, a dancing competition and Thai folk music, together with a sales market of OTOP products.

The Trang Chamber of Commerce organises both the Trang Cake Festival  in August, and the Trang Roast Pork Festival in September, which together celebrate Trang’s famed desserts and roast pork.
